A white stag is not technically albino, rather, these have a rare genetic condition called leucism. The eyes of albino deer, whose cells can't produce melanin, can be identified by their red eyes.

A bright coat leaves them susceptible to prey, suggesting a familiar theme (referring to "Gently Floating") of innocence and purity. Due to the scarcity of sightings, when many people do witness their presence, they take this as a sign of noteworthy change to come in their lives.
